Cold roasted sweet potato salad with pomegranate arils and sunflower seeds with easy to make homemade dressing. This sweet potato salad will be your favorite lunch.

Quick and easy to make for lunch lettuce salad with baked sweet potato cubes, pomegranate and sunflower seeds. Topped with honey and dijon mustard dressing made with only 5 ingredients.

How to make Sweet Potato Salad

  1. (Full recipe and video below). Gather all ingredients: sweet potato, pomegranate seeds, lettuce, sunflower seeds, dijon mustard, apple cider vinegar, olive oil, honey and salt.
  2. Peel and dice sweet potato, mix with oil, lay on baking sheet.
  3. Bake for 15-20 minutes at 350 F.
  4. Make dressing in a small bowl by mixing dijon mustard, apple cider vinegar, oil, honey and salt.

Roasted Sweet Potato Salad Tips

  • After roasting potatoes you should cool them off completely before adding to the salad since you are adding fresh lettuce, you don’t want to add hot cubed potatoes to fresh lettuce.
  • Mix dressing in jar or small bowl, to do it in a jar add all ingredients, close tightly with the top and shake it. If you want to use a small bowl, add dijon mustard, apple cider vinegar, olive oil, honey and salt to the bowl, you can use a spoon to mix all ingredients together until well combined.
  • If you don’t want to make the dressing you can use store bought, for example: Italian, Balsamic, Honey Mustard etc.

Salad Faq’s

What are good toppings for sweet potato salad? You can add crispy onions, nuts or fruits like strawberries or blueberries.

Do you eat the skin of sweet potatoes? Yes, it’s ok to eat sweet potato skin, and you do not have to peel before roasting, preferably for this recipe we are peeling the skin off but it is not necessary.

What is honey mustard dressing made of? You can make the dressing with few simple ingredients but main ingredients are: mustard and honey, add oil as a base, then add a little bit of apple cider vinegar to add additional flavor and salt.

Ingredients

Salad

  • 1 sweet potato peeled & cubed
  • 1 tsp. oil
  • 3 cups lettuce chopped
  • 1/2 cup pomegranate arils
  • 3 Tbsp. sunflower seeds

Dressing

  • 3 Tbsp. dijon mustard
  • 2 Tbsp. olive oil
  • 1 1/2 Tbsp. apple cider vinegar
  • 1 1/2 Tbsp. honey
  • 1/8 tsp. salt

Instructions

  • Preheat oven to 360 F, prepare baking sheet with parchment paper.
  • Place cubed sweet potato on baking sheet, add oil and mix it.
  • Bake for 15-20 minutes until sweet potato is soft, cool off before adding to the salad.
  • Arrange salad in a large bowl: add lettuce, sweet potato, pomegranate arils and sunflower seeds, set aside.
  • Make dressing in a small bowl or jar, add: dijon mustard, olive oil, apple cider vinegar, honey and salt, mix it.
  • Add dressing to the salad, toss it.
